Step:

  1. Lets start cooking wash & soak basmati rice for about an hour keep its ingredients in a plate set aside then prepare pulao masala powder using pulao ingredients mentioned above & boil mutton with 1/2 teaspoon turmeric powder salt & ginger garlic paste

  2. Chop onions thinly take a nonstick wok add oil now saut till its soften & changes its colour further add ginger garlic paste & few cloves sliced saut for two minutes then add the cinnamon sticks, green chili, cloves, black cardamoms

  3. Once its slightly golden pop in the mutton mix it well

  4. Dont discard anything the mutton stock will be used for cooking rice with added water accordingly saut the mutton onions with salt & black pepper powder & pulao masala till the mutton turns to dark brown then pop in the mutton stock & sugar to balance the taste & enhanced flavors of spices.

  5. Now add more water accordingly to the rice let it boil then add the soaked rice when it boils cover the lid & simmer it for about 10 minutes check with a spoon if the rice is done keep it on low flame for about 3-5 minutes then off the flame burner let it settle for 10 minutes

  6. Then garnish it with coriander leaves & enjoy the delicious awesome Pakistani mutton pulao with salad & raita for a complete meal....!

Ingredients

  1. For cooking rice :-
  2. 1 kg basmati rice
  3. as required 2cinnamon sticks, cloves 6-8,1 green chilli,2 black cardamoms
  4. 2 teaspoons Salt
  5. as required Water accordingly as rice brand & cooking timings may vary
  6. FOR the stock :-
  7. 1 kg mutton with bones
  8. 3 medium sized onions
  9. 3-4 Fresh garlic cloves
  10. 1 piece ginger
  11. as per taste Salt
  12. 1/2 teaspoon turmeric powder
  13. 5-6 tablespoons Oil for cooking
  14. For pulao masala:-
  15. 2 bay leaves
  16. 2 Cinnamon sticks
  17. 4-5 black cardamoms
  18. 10 cloves
  19. 1 teaspoon Cumin seeds
  20. 1 teaspoon coriander seeds (dhaniya)
  21. 1 teaspoon sugar
  22. 1 teaspoon ginger garlic paste
  23. For garnishing:-
  24. As required Coriander (hara dhaniya) (kothmir)
