Cut the potato into even pieces and boil in a pan of lightly salted water for 8 minutes until fork tender
Meanwhile, fry the onion and bacon on a medium heat until the onion is transparent and the bacon is crisping
Drain and mash the potatoes, season with salt and pepper and mix in the bacon, onions and flour
Oil the frying pan again and set on a medium-low heat
Divide the potato mixure into 4 using a spoon. Just dollop into the pan then neaten with the spoon. You won't be able to shape these with your hands. Too hot and sticky!
Fry for 4 minutes on each side until set, turning golden and warmed through
