do not fill these baskets until just before serving or they will become soggy
preheat oven to 200C/400F
sift the flour and salt together make a well add egg whites , orange juice and milk, whisk hard until you get a very smooth and bubbly batter,heat frying pan to high with just a little oil. Make 6 thin pancakes.
place 6 small oven proof bowls upside down on a baking tray, arrange the pancakes over them. Bake in oven fir about ten minutes until they are crisp and look like little baskets. Lift of the moulds and cool, set aside until needed.
for filling, pare a thin piece of the orange rind, cut it into thin strips, blanch in boiling water for 30 seconds, rinse in cold water set aside. Cut the peel and white pith of orange. Devide into neat segments.Catch juice. combine with the blueberries heating them very gentle
spoon fruit into basket, add two halves of strawberries to each basket and sprinkle the orange peel for garnish. Serve with creme fraiche
