Step:

  1. Mix the marinade ingredients and season to taste

  2. Put the chicken and half of the chilli in a bowl and add half of the marinade. Let sit for 5 minutes then discard this half of the marinade

  3. Thread the chicken, peppers and half of the pineapple equally between 8 skewers. Brush them with some of the rest of the marinade

  4. Grill for around 8 minutes, turning often, until the chicken starts to char at the edges and is cooked through

  5. Cook the noodles according to the pack directions. When done stir through the leftover pineapple chunks, chilli and spring onions

  6. Serve each portion in a bowl alongside 2 skewers and drizzle leftover marinade over all


Ingredients

  1. Skewers
  2. 6 chicken thighs cut into chunks
  3. 425 grams can of pineapple chunks
  4. 1 red bell pepper cut into chunks
  5. Marinade
  6. 1 the juice reserved from the can of pineapple chunks
  7. 4 tbsp tomato ketchup (I have a tomato-free ketchup recipe listed if required)
  8. 4 tsp rice wine vinegar
  9. 1 red chilli, deseeded and finely chopped
  10. 6 spring onions/scallions sliced
  11. 4 individual serve size (65g each) chicken ramen noodles or flat rice noodles
  12. 8 skewers
