  1. Heat oven 450°F. Clean and peel potatoes. Put in bowl with water until ready for use.

Ingredients

  1. 2 lb chicken tighs
  2. 2 lb potatoes (cut and peeled)
  3. 5 oz Kale (Fresh)
  4. 1 cup onion chopped
  5. 5 clove garlic minced
  6. 1 each red bell pepper (seeds removed and sliced)
  7. 1/4 cup olive oil or more as desired
  8. 1 tsp dried thyme
  9. 1 tsp dried rosemary
  10. 1/2 cup chopped apple (optional)
  11. 1 tsp each salt, pepper and paprika
  12. 1/2 cup cranberries dried
  13. 1/4 cup toasted almonds sliced
  14. Garnish
  15. 1/2 cup lemon wedges cut in fours
  16. 1/2 tbsp parsley fresh
