Step:

  1. Peel and finely slice all the onions, add the oil into a pan, add the onions and soften them without letting them burn . Add the sugar, water and aromat . Stir well and cook the onions on a medium heat until caramelised. This will take some time , do not let them burn, they should be golden brown with a few crisp bits only.

  2. Peel and boil your potatoes . Mash them with the milk , butter and season with salt or salt substitute and the nutmeg.

  3. Set aside a small amount of onions for garnish . Add the rest of the caramelised onions to the mashed potatoes , stir in well.

  4. Serve as a side with a main meal or on its own with vegetables or fried the next day when all the flavours have infused.


Ingredients

  1. 6 medium to large potatoes
  2. 2 tbsp butter
  3. 2 tbsp milk
  4. 1 pinch ground nutmeg
  5. 1/2 tsp Knorr aromat or other instant stock powder or granule
  6. 50 ml water
  7. 3 large white onions
  8. 2 large shallots
  9. 2 small brown onions
  10. 5 spring onions
  11. 3/4 tbsp sugar
  12. 1 tbsp vegetable oil
  13. 1 pinch salt or salt substitute (to taste)
