Peel and finely slice all the onions, add the oil into a pan, add the onions and soften them without letting them burn . Add the sugar, water and aromat . Stir well and cook the onions on a medium heat until caramelised. This will take some time , do not let them burn, they should be golden brown with a few crisp bits only.
Peel and boil your potatoes . Mash them with the milk , butter and season with salt or salt substitute and the nutmeg.
Set aside a small amount of onions for garnish . Add the rest of the caramelised onions to the mashed potatoes , stir in well.
Serve as a side with a main meal or on its own with vegetables or fried the next day when all the flavours have infused.
