Step:

  1. Preheat oven to 425

  2. Place the chopped cauliflower on heavy aluminum foil,drizzle with 2 tbsp olive oil, wrap it up with more foil, place on a cookie sheet and roast in oven for 45-55 minutes.

  3. Remove cauliflower to a large bowl and mash as much as you can.

  4. Add all remaining ingredients and with a hand mixer beat until slightly creamy and whipped. Enjoy!!


Ingredients

  1. 1 head of cauliflower(mine was 1.5 pounds)
  2. 2 tbsp olive oil, extra virgin
  3. 1/4 cup olive oil, extra virgin
  4. 1/3 cup heavy cream(you could use half and half but I prefer a rich cream)
  5. 1 tsp chopped garlic
  6. 1/3 cup grated parmesan cheese(I prefer the good stuff!!)
  7. 1 tbsp dried parsley
  8. 1 sea salt and fresh cracked pepper to taste
  9. 1/2 tsp ground nutmeg(its that secret ingredient that gives this dish a rustic taste!!)
