Step:

  1. In stock pot, heat oil over medium high. Add onion, green pepper, carrot, and garlic. Saute until tender, about 10 minutes.

  2. Add remaining except cheese and bring to a boil. Reduce heat and simmer, covered, until chicken is cooked, about 20 minutes.

  3. Remove chicken from pot. Shred, and return to pot.

  4. Serve with a sprinkle of cheese.

  3. 1/2 green pepper, chopped
  4. 1 onion, chopped
  5. 32 oz chicken broth
  6. 1 carrot, chopped
  7. 8 oz tomato sauce
  8. 1/4 cup rice
  9. 2 cup water
  10. 1/2 tsp cumin
  11. 2 chicken breasts
  12. 1/2 tsp chili powder
  13. 1/2 tsp celery seed
  14. 1/2 tsp pepper
  15. 1/2 tsp salt
  16. 1 Mexican blend shredded cheese
