Step:

  1. Add oats to boiling water and microwave on high for 1 minute

  2. Add all other ingredients and mix well - do not drain any unabsorbed water

  3. Allow to cool then churn in ice cream maker for 15 - 30 minutes

  4. If you don't have an icecream maker, pour the mixture into a freezer container and stir it every 20 minutes until it reaches your desired consistency

  5. Makes a litre of ice cream


Ingredients

  1. 90 grams gluten-free rolled oats
  2. 240 ml boiling water
  3. 480 ml full fat coconut milk
  4. 100 grams soft brown sugar
  5. 60 ml maple syrup
  6. 1 tbsp cinnamon
  7. 1 tsp xanthan gum
  8. 1 tsp vanilla essence
