Step:

  1. In a sauce pot, whisk milk and flour over medium heat until thickens. About 5-7 minutes, set aside to cool.

  2. In a large mixing bowl, beat sugar, butter and shortening several minutes until it becomes fluffy. Scrape bottom of bowl and sides,add vanilla and mix through.

  3. Beat in thickened milk mixture and beat several minutes again, you want to get volume.

  4. Chill for 2 hours before assembling whoopie pies.

  5. Now for the batter.

  6. Preheat oven to 375degrees f.

  7. In a large mixing bowl beat sugar with shortening. Add eggs and beat until mixture is very creamy about 3 minutes. Add vanilla.

  8. Add dry ingredients and milk. This batter is thick.

  9. On parchment paper lined baking pan draw circles with a pencil and cup. Turn parchment over, drop a large tablespoon of batter and spread within 1/4 " of outer circle. This allows for spreading during baking.

  10. Smooth out just alittle with back of spoon so batter won't be too high. Keep each about 2" apart and as even in diameter as possible.

  11. Bake 17 minutes. Do not over bake. Tooth pick inserted in center of cakes should be come out JUST a touch moist.

  12. Cool cakes completely on a rack. Now start filling.

  13. Pick two cake rounds that are close in shape. Place filling on flat side of cake and top with another cake. Assemble all your pies. Chill 1- 2 hours before serving and store in refrigerator.

  14. You will most likely have leftover cream filling. You could make these double stuff whoopie pies or just freeze any unused portion. One pie is equal to two portions.

  13. 9 tbsp flour
  14. 1 cup butter
  15. 1 cup shortening
  16. 2 1/4 cup sugar
  17. 1 tsp vanilla
