Step:
Add water in soup pot ,add salt,all sliced fresh herbs ,let it boil on medium heat about5 mins
Add cleaned and trimmed chicken feet ,let it boil for 10 mins,reduce heat to simmer another 1 hour
Time to seasoning,add tamarind paste,fish sauce,dried roasted chilli,i want the soup smooth ,so i use seive to protect chilli flake drops in the pot ,what i want is spicy ,sour taste not their texture ,afterseasoning let it cook half an hour more
Now soup will reduce like one in third,taste,add green leaves like coriander before serving hot in clay pot
To serve portion fit in clay pot size,warm and top with green leaves

2 kg chicken feet,trimmed,cleaned,cut half or use whole
3 stalks of lemongrass
1 inch long fresh turmeric,sliced
1 inch long fresh galangal,sliced
10 kaffir lime leaves
1 bunch use both coriander root and leaves
1/2 cup dried fresh roasted hot chilli
3 onion,quartered
1/2 cup tamarind paste
1 tsp salt
1/2 cup fish sauce
2 liter water
