Step:

  1. Add all ingredients, except chicken and EVOO, to a blender and blend until smooth.

  2. Place chicken breasts in bottom of slow cooker and pour sauce over the tops. Drizzle with additional 1/2 tbsp of EVOO.

  3. Cook on low for 8 hours. Serve over rice.

  1. 1 1/2 lb Boneless Skinless Chicken Breast
  2. 1 cup Salsa (your favorite kind)
  3. 1/4 cup Creamy Peanut Butter
  4. 3/4 tbsp Agave Nectar or Honey
  5. 2 tbsp Lemon Juice
  6. 1 small Sliver Crystalized Ginger
  7. 1 tbsp Soy Sauce
  8. 1 small Drop Sesame Oil
  9. 1/2 tbsp Ground Coriander
  10. 1 tsp Ground Red Pepper
  11. 1 tsp Kosher Salt
  12. 1/2 tbsp Extra Virgin Olive Oil
