Step:
Let the ice cream sit out to soften a little or put it in the microwave for a few seconds
Dice the marzipan into small pieces around half the size as the dried cranberries
Mix the marzipan, cranberry sauce and dried cranberries into the ice cream
Put into a container and freeze until set
Serve with Simnel cake at Easter and goes well with Christmas pudding if you're not a brandy sauce lover. I sometimes add chopped pistachio nuts for extra colour if serving on it's own
Ingredients
500 grams vanilla ice cream, see my profile for a dairy/soy-free recipe
100 grams marzipan
4 tbsp cranberry sauce
40 grams dried cranberries
