Wash zucchini and dry thoroughly.
Trim ends off of the zucchini.
Using a julienne peeler or spiralizer, create thin strips.
Place in a colander over a bowl and let sit a few minutes while liquid drains from the zucchini.
In a large skillet, heat the oil over medium high heat.
Add zucchini strips and sprinkle with salt and pepper.
Cook 2 to 3 minutes, stirring as needed, until zucchini is cooked through and tender.
Serve warm or cold.
