WARNING this dish will indeed burn your gizzard out it's very hot!
place chilies and garlic in blender, blend thoroughly till like a paste set aside.
bring a kettle of water to boil put noodles in colander and pour hot water over noodles. carefully unfold and separate them set aside.
heat oil in wok get quite hot put in chili garlic paste watch out the pepper "fumes"can be irritating if you have a Turkey deep fryer out side, your wok needs to be screaming hot like in the restaurant 5000 btu's, 15 seconds add chicken for 30 seconds this goes fast with high heat. stir fry, stir in everything except noodles bamboo shoots and basil then add noodles stir fry for 30 seconds add bamboo shoots then stir fry for 1 minute turn off heat and add basil
when you stir fry it's fast you got to move have everything there you leave it with no stirring it will be burnt. and again it is a very hot dish! also don't use oyster flavoured sauce but oyster sauce
