Step:

  1. Puris:
    Mix dry ingredients well add oil and keep on mixing, add few drops of water and bind add little more do not put much of water as you need not soft or too hard dough, bind till dough is hard enough to roll and keep aside for half and hour cover with samp kitchen towel. Make 2-3 balls of dough and roll thin roti, the rest of balls should be covered, use round cutter to get all even puris, cover the puris

  2. Deep fry on low or medium flame, put one at a time and make sure puffs up then add another till you get 6-7 puris, make it golden brown colour and crisped up
    remove on strainer.

    Paani:
    Blend all with water and keep in fridge to chill. It should be hot, sweet and sour

  2. 1 cup Sooji (Semolina)
  3. 1 cup Maida (All purpose flour)
  4. to taste Salt
  5. 1 tsp Oil
  6. 1/4 tsp Soda Bicarbonate or Eno fruit salt
  7. 1/2 tsp Lemon juice
  8. Paani:
  9. 1/2 cup Tamarind pulp (boiled with dates, sugar and water)
  10. 1 bunch Mint leaves
  11. 1/4 bunch Coriander leaves
  12. pinch Salt
  13. 2-3 tbsp Sugar
  14. 3 Green Chillies
  15. pinch Black salt (optional)
  16. 1/2 tsp Cummin powder
  17. Filling:
  18. 2 Boiled Potatoes (cubed finely)
  19. as needed Boiled Moong (Bean Sprouts) or Chana (Gram)
  20. 1 Onion (chopped)
  21. 1 cup unsweetened Boondi (optional)
